Beef tips and brussel sprouts


  • 6oz grass fed beef tips
  • 150g brussel sprouts
  • 20g yellow onion
  • 1 clove garlic, minced
  • 1 Tbl ghee
  • 1/2 tsp avocado oil


  • Preheat air fryer to 400°.
  • Cut stem off brussel sprouts and cut in half
  • Lightly toss in oil, sprinkle with salt
  • Cook 10-12 mins until tender
  • Heat small skillet. Add ghee and onion
  • Saute 2-3 mins
  • Add garlic and saute another 2-3 mins
  • Turn off burner and add fresh thyme, rosemary and sage
  • Sprinkle with salt
  • Let sit in hot pan
  • Heat cast iron skillet over medium heat
  • Add 1 tsp ghee
  • When skillet is warm add beef and cook until desired temperature
  • Typically 2-3 mins each side
  • Plate beef and brussel sprouts
  • Drizzle ghee/garlic/onion mixture over whole plate
  • Top with red salt and fresh thyme
