Air Fried Snapper with Delicata Squash and Broccoli
Ingredients:
- 2 5oz pieces of snapper
- 50g chopped raw broccoli
- 100g chopped delicata squash
- 1tbsp coconut oil/ghee
- 1tsp minced garlic
- 1tbsp fresh chopped herbs (I used rosemary, thyme and sage)
- Avocado oil
- Red salt
- Gray celtic salt
- Redmond real salt
- Juice from lemon
Directions:
- Lightly oil snapper and season with Redmond real salt
- Drizzle with fresh lemon juice. Add to bottom tray of air fryer
- Lightly oil squash and season with Redmond real salt
- Add to middle tray of air fryer
- Air fryer fish and squash at same time at 350° for 10-15 minutes
- Squash should be tender and fish flaky.
- Saute minced garlic and coconut oil/ghee in small skillet for 2-3 minutes, until fragrant
- Add most of fresh herbs to skillet (save a little for garnish)
- Sprinkle with Redmond real salt and fresh squeezed lemon
- Set aside.
- Add chopped broccoli to a different sauce pan
- When squash is done, combine with broccoli on low heat for 2-3 minutes
- Do not cook broccoli, just add a little heat to warm it
- To plate the dish, use a warm plate
- Add broccoli/squash mixture first
- Season with celtic salt
- Arrange fish on top of broccoli/squash
- Drizzle most of garlic/ghee/herb mixture over fish and then drizzle over broccoli/squash
- Sprinkle fish with red salt and fresh squeezed lemon
- Garnish whole dish with remaining chopped herbs
