Air fried Alaskan Cod with greens

Ingredients

  • 225g wild caught Alaskan cod
  • 50g spring mix
  • 50g spinach
  • 30g arugula
  • 15g green onion
  • 1 radish
  • 1 tbl + 1/2 tsp avocado oil
  • 1/4 tsp fresh squeezed lemon juice
  • 1 tsp italian seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp Redmond real salt

Directions:

  • Preheat air fryer to 370°
  • Lightly spray or lightly drizzle cod with roughly 1/2 tsp avocado oil
  • Sprinkle both sides with 1/4 tsp salt, 1/4 tsp garlic powder and 1/4 tsp onion powder
  • Cook 12 mins
  • Meanwhile, combine remaining ingredients (except avocado oil and lemon juice) in large bowl
  • In small bowl, whisk together avocado oil, lemon choice 1/4 tsp italian seasoning and a pinch of salt, garlic powder, and onion powder
  • When cod is cooked, shred and add to salad
  • Lightly toss
  • Top with a sprinkle of salt and fresh parsley.
