Air fried Alaskan Cod with greens
Ingredients
- 225g wild caught Alaskan cod
- 50g spring mix
- 50g spinach
- 30g arugula
- 15g green onion
- 1 radish
- 1 tbl + 1/2 tsp avocado oil
- 1/4 tsp fresh squeezed lemon juice
- 1 tsp italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp Redmond real salt
Directions:
- Preheat air fryer to 370°
- Lightly spray or lightly drizzle cod with roughly 1/2 tsp avocado oil
- Sprinkle both sides with 1/4 tsp salt, 1/4 tsp garlic powder and 1/4 tsp onion powder
- Cook 12 mins
- Meanwhile, combine remaining ingredients (except avocado oil and lemon juice) in large bowl
- In small bowl, whisk together avocado oil, lemon choice 1/4 tsp italian seasoning and a pinch of salt, garlic powder, and onion powder
- When cod is cooked, shred and add to salad
- Lightly toss
- Top with a sprinkle of salt and fresh parsley.
